Crispy Buffalo Chicken Wings

Crispy Buffalo Chicken Wings can be hard to accomplish but when you nail it they are delicious!  So often attempts at homemade wings end in soggy skin, which is a crime when your talking about Chicken Wings.

This recipe is easy and you will be producing flawless wings every time.

Ingredients:

1 dozen chicken wing pieces

1/2 tsp salt

1/2 tsp paprika

1/2 tsp chili powder

1/2 tsp garlic powder

1/4 tsp black pepper

2 tsp baking powder

Hot sauce/Buffalo sauce of your choice

 

 

Directions:

  1. Preheat Oven to 400 degrees.
  2. Separate wing pieces at the joint.  Use a good sharp knife and make sure you’ve found the joint so you are not trying to cut through bone.
  3. Make sure the pieces are completely thawed and pat dry with a paper towel.
  4. Combine all the seasonings and baking powder in a bowl and mix.
  5. This next step you can do however  works best for you.  I like to put the chicken pieces in a zip lock bag with the seasoning and shake them around.  It works nicely to cover them all well.  You could also just mix it in a bowl if you like.
  6. Arrange your wings for baking. It’s important to have them on something where the cooking juices can drain away.  I using a baking rack on a cookie sheet and that works well for me.  This keeps the wings crispy on all sides.  You also do not want your wings crowded so give them as much space as you can.  Again this helps with air flow and keeps them crispy.
  7. Bake at 450 degrees for 35 to 45 minutes.  This time depends on the size of your wings.  If they are on the smaller side 30 minutes might be enough but if they are bigger you will probably want more time.  Wings don’t have a lot of meat on them so you are not necessarily waiting them to be done but for the correct amount of crisp 🙂
  8. Remove from oven and toss with your favorite wing sauce and enjoy!
